Chipotle Mexican Grill is a restaurant founded in 1993 by Steve Ells. Ells was a recent college graduate who decided to attend culinary school and become a chef. After several years of working at restaurants in San Francisco, Ells moved to Colorado and opened the first Chipotle. At first, Ells only wanted to open one restaurant, let it grow for a while, and then move on to a full service restaurant. Chipotle follows the model of a taqueria or burrito shop, with fast, freshly prepared food using local ingredients and a minimum of floor space. It is not a full service restaurant. But by the time Ells opened his second Chipotle, the restaurant was so successful that he decided to focus all his efforts and resources into it. Over the years, Chipotle has grown from one store into a large chain with over 2,000 locations in five countries.
